Welcome to Andhara Pradesh. 

This is a Chef Kanthi special, and we're heading to the home of his family - Andhra Pradesh. Famous for growing some of Indias hottest chillies,  aubergines and rice. Andhra is steeped in food stories that celebrate the ingredients that grow on its doorstep. 

The soil here is so fertile that they grow 4 crops a year and plenty of vegetation. One of very rare regions in south that does not use much coconut in cooking though it has a coast line.

Sooo... to the food. this week we are making.

 

ALOO CAPSICUM VEPUDU
Kadai fried new potato, peppers and sweet potato loaded with curry leaves

GONGOORA PAPPU
A sorrel and green mango dal, and with sorrel in season Kanthi was keen to get it on the menu.

VANKAYA SORAKAYA PULUSU
Aubergine and bottle gourd stew with a spicy sweet and sour tomato - jaggery sauce

KOBBARI ANNAM
A rice dish tempered with fresh coconut, dariya daal, dry Guntur chilli and curry leaves
